Indulge in the comforting flavors of these savory Empadas, filled with tender shredded chicken, aromatic garlic, and onions, all encased in a flaky buttery crust. Ideal for a cozy weeknight dinner or a festive gathering with friends.

- 3 cups all-purpose flour
- 1 cup unsalted butter
- 1 tsp salt
- 1/2 cup cold water
- 2 cups shredded chicken
- 1 medium onion
- 2 cloves garlic
- 1 tsp black pepper

In a large bowl, combine the flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

Gradually add the cold water, mixing until the dough comes together. Do not overwork the dough. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

In a pan, sauté the chopped onion and minced garlic until translucent. Add the shredded chicken, black pepper, and any additional seasonings you prefer. Cook for about 5 minutes. Remove from heat and let cool.

Preheat your oven to 180°C (350°F). Roll out the chilled dough on a floured surface to about 1/8 inch thick.

Cut out circles of dough to fit into your empada molds. Fill each with the chicken mixture and cover with another circle of dough, sealing the edges by pressing with a fork.

Place the empadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until golden brown.
