Indulge in the classic French treat of éclairs, filled with rich cream and topped with luscious dark chocolate. Perfect for a special occasion or a delightful dessert after dinner, these pastries will impress any guest.

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 cup dark chocolate

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.

Remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

Let the dough cool for 5 minutes, then beat in eggs one at a time until smooth and glossy.

Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long strips onto the prepared baking sheet.

Bake for 20-25 minutes until golden brown and puffed. Do not open the oven during baking.

While éclairs cool, whip the heavy cream with powdered sugar until soft peaks form.

Once éclairs are cool, fill them by cutting a small slit on one side and piping in the whipped cream.
