Experience the rich flavors of traditional Romanian Drob, a savory lamb organ loaf infused with fresh herbs and spices. Perfect for a festive gathering or a cozy family dinner, this dish brings warmth and comfort to any table.

Ingredients

  • 500 grams lamb organs (liver, lungs, heart)
  • 300 grams ground lamb meat
  • 4 pieces eggs
  • 2 cups fresh parsley
  • 1 cup green onions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried thyme
  • 2 tablespoons vegetable oil

Method

    Preheat the oven to 180°C (350°F). Grease a baking dish with vegetable oil.

    In a large pot, boil the cleaned lamb organs in salted water for about 30 minutes until tender. Drain and let cool.

    Once cooled, chop the boiled organs into small pieces and place them into a large mixing bowl. Add ground lamb meat, eggs, parsley, green onions, salt, black pepper, and thyme. Mix well until all ingredients are combined.

    Transfer the mixture into the greased baking dish, spreading it evenly.

    Bake in the preheated oven for 45-60 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
