Indulge in the delightful sweetness of Dorayaki, a beloved Japanese treat featuring fluffy pancakes filled with smooth anko. Perfect for a cozy afternoon snack or a charming dessert at your next gathering.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 2 large eggs
  • 1/2 cup sugar
  • 1 tbsp honey
  • 1/2 cup water
  • 1 cup anko (sweet red bean paste)
  • 1 tbsp unsalted butter

Method

  1. 1

In a mixing bowl, combine the sifted flour and baking powder.

  2. 2

In another bowl, whisk together the eggs, sugar, honey, and water until well mixed.

  3. 3

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Let the batter rest for 10 minutes.

  4. 4

Heat a non-stick frying pan over medium heat and lightly grease it with butter.

  5. 5

Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

  6. 6

Remove the pancakes from the pan and place them on a plate. Repeat with the remaining batter.

  7. 7

To assemble, spread a generous amount of anko on one pancake and top it with another pancake. Press gently to secure.

  8. 8

Serve warm and enjoy your homemade dorayaki!
