- 1 cup all-purpose flour
- 1 tbsp baking powder
- 2 large eggs
- 1/2 cup sugar
- 1 tbsp honey
- 1/2 cup water
- 1 cup anko (sweet red bean paste)
- 1 tbsp unsalted butter

In a mixing bowl, combine the sifted flour and baking powder.

In another bowl, whisk together the eggs, sugar, honey, and water until well mixed.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Let the batter rest for 10 minutes.

Heat a non-stick frying pan over medium heat and lightly grease it with butter.

Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

Remove the pancakes from the pan and place them on a plate. Repeat with the remaining batter.

To assemble, spread a generous amount of anko on one pancake and top it with another pancake. Press gently to secure.
