- 1 cup long grain rice
- 1 cup ground beef or lamb
- 1 large onion
- 2 cups grape leaves
- 1 tablespoon tomato paste
- 1 teaspoon dried mint
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups water
Method

In a large pot, cook the rice in boiling salted water for about 10 minutes until slightly undercooked. Drain and set aside.

In a skillet, sauté the chopped onion until translucent. Add the ground meat and cook until browned. Stir in the tomato paste, dried mint, salt, and pepper.

In a large bowl, mix the cooked rice with the meat mixture until well combined.

Lay a grape leaf flat and place about a tablespoon of the rice and meat mixture at the base. Fold the sides in and roll up tightly, like a burrito. Repeat with remaining leaves and filling.

Place the rolled dolmeh in a pot, seam side down. Add the water to cover them and bring to a boil. Reduce heat to low, cover, and simmer for about 45 minutes.

Once cooked, remove from heat and let them sit for 10 minutes before serving.

Serve warm, optionally with yogurt or a fresh salad.
