Experience the heartwarming flavors of Persian cuisine with Dolmeh, a delightful dish of grape leaves stuffed with fragrant rice and savory ground beef. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 1 cup long grain rice
  • 1 cup ground beef or lamb
  • 1 large onion
  • 2 cups grape leaves
  • 1 tablespoon tomato paste
  • 1 teaspoon dried mint
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups water

Method

  1. 1

In a large pot, cook the rice in boiling salted water for about 10 minutes until slightly undercooked. Drain and set aside.

  2. 2

In a skillet, sauté the chopped onion until translucent. Add the ground meat and cook until browned. Stir in the tomato paste, dried mint, salt, and pepper.

  3. 3

In a large bowl, mix the cooked rice with the meat mixture until well combined.

  4. 4

Lay a grape leaf flat and place about a tablespoon of the rice and meat mixture at the base. Fold the sides in and roll up tightly, like a burrito. Repeat with remaining leaves and filling.

  5. 5

Place the rolled dolmeh in a pot, seam side down. Add the water to cover them and bring to a boil. Reduce heat to low, cover, and simmer for about 45 minutes.

  6. 6

Once cooked, remove from heat and let them sit for 10 minutes before serving.

  7. 7

Serve warm, optionally with yogurt or a fresh salad.
