Savor the comforting warmth of Doenjang Jjigae, a traditional Korean stew brimming with umami-rich fermented soybean paste, fresh tofu, and vibrant vegetables. Ideal for a cozy weeknight dinner or a gathering with friends.

Ingredients

  • 2 tablespoons doenjang (Korean fermented soybean paste)
  • 1 cup tofu, firm
  • 1 cup zucchini
  • 1 cup korean radish (mu)
  • 1 cup mushrooms (shiitake or enoki)
  • 2 cups water or vegetable broth
  • 1 tablespoon garlic, minced
  • 1 small green chili pepper

Method

  1. 1

In a pot, bring the water or vegetable broth to a boil over medium heat.

  2. 2

Add the doenjang to the boiling water and stir well to dissolve.

  3. 3

Add the sliced zucchini, cubed Korean radish, and mushrooms to the pot.

  4. 4

Reduce the heat to low and let it simmer for about 10 minutes until the vegetables are tender.

  5. 5

Add the cubed tofu, minced garlic, and sliced green chili pepper (if using) to the pot.

  6. 6

Simmer for another 5-10 minutes to let the flavors meld together.

  7. 7

Taste and adjust the seasoning with more doenjang if desired.

  8. 8

Serve hot with steamed rice and enjoy your Doenjang Jjigae!
