Indulge in the vibrant flavors of Dadar Gulung, a delightful Indonesian dessert featuring soft green crepes filled with sweet coconut and palm sugar. Perfect for a special occasion or a cozy afternoon treat with tea.
IngredientsWhat you need
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1/2 cup palm sugar
- 1/4 tsp salt
- 1 tsp pandan extract
- 1 cup grated coconut
- 2 tbsp water
- 1 tbsp vegetable oil
Method
- 1
In a bowl, mix together the all-purpose flour, coconut milk, palm sugar, salt, and pandan extract until you have a smooth batter.
- 2
Heat a non-stick pan on medium heat and lightly grease it with vegetable oil.
- 3
Pour a ladle of the batter into the pan, swirling it to cover the surface evenly. Cook for about 2-3 minutes until the edges lift and the surface is set.
- 4
Carefully remove the pancake from the pan and place it on a clean surface. Repeat the process with the remaining batter to make more pancakes.
- 5
In a separate bowl, mix the grated coconut with a little water and palm sugar to create a sweet filling.
- 6
Place a spoonful of the coconut mixture onto the center of each pancake and roll it up tightly.
- 7
Serve the Dadar Gulung warm or at room temperature as a delightful snack or dessert.
