Indulge in a classic French Croque Madame, where layers of savory ham and melted Gruyère are enveloped in buttery toast, topped with a perfectly fried egg. Ideal for a cozy brunch or a delightful weeknight treat.

- 4 slices white bread
- 2 slices ham
- 2 slices Gruyère cheese
- 2 tablespoons butter
- 2 large eggs
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1 pinch nutmeg

Preheat your oven to 200°C (400°F).

In a small saucepan, melt 1 tablespoon of butter over medium heat. Add the flour and whisk for about 1 minute until it forms a paste.

Gradually add the milk while whisking continuously to prevent lumps. Cook until the sauce thickens, then add a pinch of nutmeg and season with salt and pepper to taste.

Spread butter on one side of each slice of bread. On the non-buttered side, layer ham and Gruyère cheese. Top with another slice of bread, buttered side up.

In a skillet over medium heat, cook the sandwiches for about 3-4 minutes on each side until golden brown and the cheese starts to melt.

While the sandwiches are cooking, fry the eggs in another pan to your desired doneness.

Once the sandwiches are golden, place them on a baking sheet and pour the béchamel sauce on top. Bake in the oven for about 5 minutes until bubbly.
