- 100 g granulated sugar
- 4 large egg yolks
- 1 stick cinnamon
- 1 zest lemon
- 2 tbsp cornstarch
- 2 tbsp brown sugar

In a saucepan, combine the milk, half of the granulated sugar, the cinnamon stick, and lemon zest. Heat until just below boiling, then remove from heat and let steep for 15 minutes.

In a separate bowl, whisk together the egg yolks, remaining granulated sugar, and cornstarch until smooth.

Strain the infused milk mixture to remove the cinnamon stick and lemon zest, then gradually whisk it into the egg yolk mixture until fully combined.

Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).

Once thickened, pour the mixture into individual ramekins and let them cool to room temperature before refrigerating for at least 2 hours to set.

Before serving, sprinkle a thin layer of brown sugar on top of each ramekin and use a kitchen torch to caramelize the sugar until golden and crispy.
