- 2 cups couscous
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 medium zucchini, chopped
- 1 cup chickpeas, cooked

In a pot, bring 2 cups of water to a boil. Add 1 teaspoon of salt.

Once the water is boiling, remove from heat and stir in 2 cups of couscous. Cover it and let it sit for 5 minutes.

Fluff the couscous with a fork and mix in 1 tablespoon of olive oil.

In another pan, sauté the chopped onion, carrots, and zucchini in a little olive oil over medium heat for about 10 minutes until softened.

Add the cooked chickpeas to the sautéed vegetables and stir for another 5 minutes.
