Indulge in these delightful Couques, a traditional Belgian treat that combines buttery richness with the crunch of almonds and a hint of vanilla. Perfect for a cozy afternoon snack or a sweet addition to your brunch spread.
IngredientsWhat you need
- 250 g flour
- 125 g butter
- 125 g sugar
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 large egg
- 50 g almonds
- 1 pinch salt
Method
- 1
Preheat your oven to 180°C (350°F) and prepare a baking tray lined with parchment paper.
- 2
In a large bowl, cream the softened butter and sugar together until light and fluffy.
- 3
Add the beaten egg and vanilla extract to the mixture, and mix well until combined.
- 4
In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients.
- 5
Mix until a soft dough forms. If the dough is too sticky, you can add a little more flour.
- 6
Shape the dough into small oval or round cookies and place them on the prepared baking tray. Press a few almond slices onto each cookie for decoration.
- 7
Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- 8
Remove from the oven and let the cookies cool on a wire rack before serving.
