- 1 whole rooster or chicken (about 1.5 kg)
- 2 cups red wine
- 2 tablespoons olive oil
- 200 grams bacon or lardons
- 200 grams mushrooms
- 2 medium carrots
- 1 large onion
- 2 cloves garlic
- 1 cup chicken broth
- 2 sprigs thyme
- 2 bay leaves bay leaves
- Salt and pepper to taste

In a large Dutch oven, heat olive oil over medium heat. Add the bacon and cook until crispy. Remove and set aside.

In the same pot, brown the chicken pieces on all sides, in batches if necessary. Remove and set aside with the bacon.

Add the onions, carrots, and mushrooms to the pot. Sauté until they begin to soften, about 5 minutes.

Stir in the garlic and cook for another minute. Return the chicken and bacon to the pot. Add the wine, chicken broth, thyme, and bay leaves.

Bring to a simmer, then cover and reduce heat to low. Cook for about 1.5 to 2 hours until the chicken is tender and the flavors meld.

Remove the chicken and vegetables from the pot. Discard the bay leaves and thyme. If desired, thicken the sauce by simmering uncovered for an additional 10-15 minutes.

Serve the chicken with the sauce spooned over it, accompanied by crusty bread or mashed potatoes.
