Warm your soul with a comforting bowl of congee, a beloved Asian rice porridge infused with ginger and topped with tender chicken or tofu. Ideal for a cozy weeknight dinner or a nourishing breakfast.

Ingredients

  • 1 cup Jasmine rice
  • 8 cups water or chicken broth
  • 1 teaspoon salt
  • 2 tablespoons ginger
  • 2 scallions scallions
  • 1 cup shredded chicken or tofu
  • 2 teaspoons soy sauce

Method

  1. 1

Rinse the Jasmine rice under cold water until the water runs clear to remove excess starch.

  2. 2

In a large pot, combine the rinsed rice and water or chicken broth. Add salt and ginger.

  3. 3

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low.

  4. 4

Cover the pot and let it simmer for about 60 minutes, stirring occasionally to prevent sticking.

  5. 5

Once the rice has broken down and the congee reaches your desired consistency, remove from heat.

  6. 6

Serve hot, topped with shredded chicken or tofu, chopped scallions, and a drizzle of soy sauce.
