  • 1 whole chicken
  • 300 g jasmine rice
  • 1 tablespoon salt
  • 1 tablespoon fish sauce
  • 1 teaspoon black pepper
  • 2 stalks lemongrass
  • 4 cups water
  • 1 cucumber sliced
  • 1 plate fresh herbs

Method

    In a large pot, bring 4 cups of water to a boil. Add the whole chicken, lemongrass, salt, and black pepper. Cook for about 30-40 minutes until the chicken is fully cooked.

    Once cooked, remove the chicken from the pot and set it aside to cool. Reserve the chicken broth for later.

    In a separate pot, add the washed jasmine rice and 3 cups of the reserved chicken broth. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes until the rice is fluffy and cooked through.

    While the rice is cooking, shred the cooled chicken, discarding the skin and bones.
