Experience the heartwarming comfort of Irish colcannon, a creamy blend of buttery mashed potatoes, tender cabbage, and vibrant scallions. Ideal for cozy weeknight dinners or festive gatherings, this dish brings a taste of tradition to your table.

Ingredients

  • 900 grams potatoes
  • 200 grams cabbage
  • 100 grams scallions
  • 100 milliliters milk
  • 50 grams butter
  • to taste grams salt
  • to taste grams pepper

Method

  1. 1

Place the peeled and quartered potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil.

  2. 2

Once the potatoes are boiling, reduce the heat and simmer for about 20 minutes or until they are tender.

  3. 3

In a separate pot, bring a small amount of water to boil and add the finely chopped cabbage. Cook for about 5 minutes until tender, then drain.

  4. 4

Drain the cooked potatoes and return them to the pot. Mash them until smooth.

  5. 5

Stir in the heated milk and butter into the mashed potatoes until well combined and creamy. Add the cooked cabbage and chopped scallions.

  6. 6

Season with salt and pepper to taste, mixing thoroughly.

  7. 7

Serve hot, optionally with a pat of butter on top for extra richness.
