Indulge in a hearty Irish coddle, brimming with savory pork sausages, crispy bacon, and tender potatoes simmered in rich chicken stock. Perfect for a cozy weeknight dinner or a comforting weekend feast with loved ones.

Ingredients

  • 450 grams pork sausages
  • 450 grams bacon
  • 4 medium potatoes
  • 2 medium onions
  • 1 liter chicken stock
  • 2 teaspoons fresh parsley
  • to taste salt and pepper

Method

    In a large pot, cook the pork sausages over medium heat until browned on all sides. Remove and set aside.

    In the same pot, add the diced bacon and cook until crispy. Drain excess fat if necessary.

    Add the sliced onions to the pot and sauté until they are soft and translucent.

    Layer the sliced potatoes over the onions, followed by the cooked sausages.

    Pour the chicken stock over the layered ingredients in the pot. Season with salt and pepper.

    Bring to a gentle simmer, then cover and cook for about 60-70 minutes, until the potatoes are tender.
