Experience the heart of Spanish cuisine with Cocido Madrileño, a hearty stew brimming with tender beef, flavorful chorizo, and vibrant vegetables. Perfect for a cozy family dinner or a festive gathering.
IngredientsWhat you need
- 300 g chickpeas
- 1 kg beef shank
- 300 g pork belly
- 2 pieces chorizo sausage
- 2 pieces potatoes
- 1 carrot carrot
- 1 head cabbage
- 1 liter water
- to taste tbsp salt
- to taste tbsp paprika
Method
- 1
In a large pot, add the soaked chickpeas and cover them with water. Bring to a boil and cook for 10 minutes. Skim off any foam that rises to the top.
- 2
Add the beef shank, pork belly, and chorizo sausage to the pot. Season with salt and add paprika. Reduce the heat and let it simmer for about 1.5 hours.
- 3
After 1.5 hours, add the potatoes, carrot, and cabbage. Continue to simmer for an additional hour until all the meats are tender and the vegetables are cooked through.
- 4
Check the seasoning and adjust salt and paprika if necessary. If you prefer a thicker broth, you can mash some of the chickpeas against the side of the pot.
- 5
Once cooked, remove the meats and vegetables from the pot and set aside. Strain the broth into a separate bowl.
- 6
Serve the broth as a soup, followed by the chickpeas, vegetables, and meats on side plates. Optionally, drizzle some olive oil over the dish before serving.
