- 300 g dried white beans
- 1 large onion
- 2 medium carrots
- 1 large bell pepper
- 3 cloves garlic
- 2 tablespoons vegetable oil
- 2 liters water
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vinegar

Soak the dried white beans in water overnight. Drain and rinse before cooking.

In a large pot, heat the vegetable oil over medium heat. Sauté the chopped onion, carrots, and bell pepper until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute, stirring frequently.

Add the soaked beans and 2 liters of water to the pot. Bring to a boil, then reduce heat and let simmer for about 90 minutes or until the beans are tender.

Season the soup with salt, black pepper, and dried thyme (if using). Continue to simmer for another 10-15 minutes.

Remove from heat and let cool slightly before serving. Adjust seasoning as necessary.
