IngredientsWhat you need
- 500 g fresh pork meat
- 150 g pork fat
- 25 g sea salt
- 15 g smoked paprika
- 2 cloves garlic
- 1 tsp black pepper
- 1 m hog casings
Method
- 1
Soak the hog casings in cold water for at least 30 minutes, then rinse thoroughly.
- 2
In a large bowl, combine the minced pork meat, pork fat, sea salt, smoked paprika, minced garlic, and black pepper.
- 3
Mix the meat mixture thoroughly until well combined. You can use your hands or a meat mixer.
- 4
Stuff the meat mixture into the prepared hog casings, twisting them into links of your desired size.
- 5
Tie off the ends of the casings securely and prick the sausages with a needle to release air.
- 6
Preheat your grill to medium-high heat and cook the chorizo links for about 15-20 minutes, turning occasionally until fully cooked.
- 7
Serve hot with crusty bread or as part of a tapas spread.
