Ingredients

  • 500 g fresh pork meat
  • 150 g pork fat
  • 25 g sea salt
  • 15 g smoked paprika
  • 2 cloves garlic
  • 1 tsp black pepper
  • 1 m hog casings

Method

    Soak the hog casings in cold water for at least 30 minutes, then rinse thoroughly.

    In a large bowl, combine the minced pork meat, pork fat, sea salt, smoked paprika, minced garlic, and black pepper.

    Mix the meat mixture thoroughly until well combined. You can use your hands or a meat mixer.

    Stuff the meat mixture into the prepared hog casings, twisting them into links of your desired size.

    Tie off the ends of the casings securely and prick the sausages with a needle to release air.
