IngredientsWhat you need
- 1 cup chickpeas (soaked overnight)
- 2 tablespoons oil
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 inch ginger (grated)
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 4 cups all-purpose flour
- 1 cup yogurt
- 1 teaspoon baking powder
- 1 cup water

In a pot, heat oil over medium heat and add cumin seeds. Let them sizzle for a few seconds.

Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.

Stir in the soaked chickpeas, red chili powder, and garam masala. Add enough water to cover the chickpeas and cook until they are soft, about 30-35 minutes.

While the chickpeas are cooking, prepare the bhature dough. In a bowl, mix all-purpose flour, yogurt, baking powder, and salt. Knead into a soft dough, adding water as needed. Let it rest for 20 minutes.

Divide the rested dough into small balls and roll each ball into a flat circle, about 6 inches in diameter.

Heat oil in a deep pan for frying. When hot, gently slide in the rolled bhature one at a time. Fry until they puff up and turn golden brown on both sides.

Serve hot bhature with the spicy chickpeas and garnish with chopped onions and coriander if desired.
