Ingredients

  • 2 cups rice flour
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 cup grated coconut
  • 1/2 cup jaggery
  • 1 tablespoon oil
  • 1/2 cup banana leaves

Method

  1. 1

In a mixing bowl, combine the rice flour, salt, and water to form a smooth, pliable dough.

  2. 2

In another bowl, mix the grated coconut and jaggery until well combined.

  3. 3

Grease the banana leaves with oil to prevent sticking.

  4. 4

Take a small portion of dough and flatten it in your palm. Place a spoonful of the coconut-jaggery mixture in the center and fold the dough over it, sealing it well.

  5. 5

Place the filled dumplings on the greased banana leaves and fold the leaves to create a parcel.

  6. 6

Set up a steamer and steam the parcels for about 15-20 minutes until cooked through.

  7. 7

Remove from the steamer and allow to cool slightly before serving.

  8. 8

Serve warm as a delightful snack or dessert.
