Chipsi Mayai is a delightful Tanzanian dish that combines crispy fried potatoes and fluffy eggs, seasoned with onion and cilantro. Enjoy this comforting meal for breakfast or a satisfying weeknight dinner that warms the soul.

Ingredients

  • 4 medium potatoes
  • 4 large eggs
  • 1 small onion
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Method

  1. 1

Heat the vegetable oil in a large frying pan over medium heat.

  2. 2

Add the diced potatoes to the hot oil and fry until golden brown and cooked through, about 10-15 minutes.

  3. 3

While the potatoes are frying, beat the eggs in a bowl and season with salt, black pepper, and chopped cilantro if using.

  4. 4

Once the potatoes are cooked, add the chopped onion to the pan and cook for an additional 2-3 minutes until the onion is soft.

  5. 5

Pour the beaten eggs evenly over the fried potatoes and onions in the pan.

  6. 6

Cover the pan and let the eggs cook for about 5 minutes, or until set.

  7. 7

Carefully flip the Chipsi Mayai using a large plate to assist if needed, and cook for another 2-3 minutes to brown the other side.

  8. 8

Once cooked, slide the Chipsi Mayai onto a serving plate and cut into wedges. Serve hot.
