Chipsi Mayai is a delightful Tanzanian dish that combines crispy fried potatoes and fluffy eggs, seasoned with onion and cilantro. Enjoy this comforting meal for breakfast or a satisfying weeknight dinner that warms the soul.

- 4 large eggs
- 1 small onion
- 1 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper

Heat the vegetable oil in a large frying pan over medium heat.

Add the diced potatoes to the hot oil and fry until golden brown and cooked through, about 10-15 minutes.

While the potatoes are frying, beat the eggs in a bowl and season with salt, black pepper, and chopped cilantro if using.

Once the potatoes are cooked, add the chopped onion to the pan and cook for an additional 2-3 minutes until the onion is soft.
