Chips Mayai is a delightful Tanzanian dish where crispy fried potatoes meet fluffy eggs, seasoned to perfection. Enjoy this comforting meal for breakfast or a cozy dinner that warms the soul.

Ingredients

  • 2 medium potatoes
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • optional vegetables

Method

    Heat the vegetable oil in a frying pan over medium heat.

    Add the potato chips to the hot oil and fry until golden brown and crispy, about 5-7 minutes.

    Remove the chips from the oil and place them on a paper towel to drain excess oil.
