Ingredients

  • 2 cups purple corn
  • 8 cups water
  • 1 cup pineapple
  • 1 cup sugar
  • 1 cinnamon stick cinnamon stick
  • 4 cloves cloves
  • 1 lime juice
  • 1 cup apple

Method

    In a large pot, combine the dried purple corn and water. Bring to a boil over high heat.

    Once boiling, reduce heat to medium-low and let it simmer for about 10 minutes.

    Add the chopped pineapple, sugar, cinnamon stick, and cloves to the pot. Stir well and let simmer for another 5 minutes.

    Remove the pot from heat and let it cool slightly. Strain the liquid into a pitcher, discarding the solids.

    Stir in the freshly squeezed lime juice and adjust sweetness if needed.

    Serve chilled, optionally garnished with chopped apple.
