Indulge in the sweet, creamy delight of Chendol, a traditional Southeast Asian dessert made with rice flour, coconut milk, and palm sugar. Perfect for warm evenings or as a refreshing treat after a meal.

Ingredients

  • 1 cup rice flour
  • 1 cup palm sugar
  • 2 cups coconut milk
  • 1 cup water
  • 1/2 cup screwpine leaves (pandan leaves)
  • 1 cup ice shavings
  • 1/4 teaspoon salt

Method

    In a pot, mix the rice flour with 1 cup of water to form a smooth batter.

    Bring a pot of water to a boil, then place a sieve or a bamboo steamer over it.

    Use a ladle to pour the rice flour mixture into the sieve, allowing the mixture to drip into the boiling water, forming green jelly.

    In another pot, dissolve the palm sugar in 1 cup of water over low heat, adding the pandan leaves and salt. Let it simmer for about 10 minutes until thickened.

    Remove the pandan leaves from the palm sugar syrup and let it cool.

    To serve, place the green jelly in a bowl, top with ice shavings, pour over the coconut milk, and drizzle with the palm sugar syrup.
