Indulge in the delicate flavors of Chawanmushi, a traditional Japanese steamed egg custard infused with dashi, tender chicken, and earthy shiitake mushrooms. A soothing dish perfect for a cozy dinner or elegant brunch.

Ingredients

  • 4 large eggs
  • 2 cups dashi broth
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 100 grams chicken thigh
  • 50 grams shiitake mushrooms
  • 4 pieces ginkgo nuts
  • 4 stalks green onions

Method

  1. 1

In a bowl, beat the eggs gently without creating bubbles.

  2. 2

In a separate pot, warm the dashi broth, then add soy sauce and mirin. Stir to combine.

  3. 3

Slowly pour the warm dashi mixture into the beaten eggs while stirring gently.

  4. 4

Strain the egg mixture through a fine sieve into another bowl to remove any lumps.

  5. 5

In a heatproof cup or bowl, place a few pieces of chicken, shiitake mushrooms, and ginkgo nuts at the bottom.

  6. 6

Carefully pour the egg mixture over the chicken and mushrooms until full.

  7. 7

Cover each cup with aluminum foil to prevent water from getting in during steaming.

  8. 8

Steam the cups in a steamer or over boiling water for about 25-30 minutes, or until the custard is set.
