- 4 large eggs
- 2 cups dashi broth
- 1 tablespoon soy sauce
- 1 teaspoon mirin
- 100 grams chicken thigh
- 50 grams shiitake mushrooms
- 4 pieces ginkgo nuts
- 4 stalks green onions

In a bowl, beat the eggs gently without creating bubbles.

In a separate pot, warm the dashi broth, then add soy sauce and mirin. Stir to combine.

Slowly pour the warm dashi mixture into the beaten eggs while stirring gently.

Strain the egg mixture through a fine sieve into another bowl to remove any lumps.

In a heatproof cup or bowl, place a few pieces of chicken, shiitake mushrooms, and ginkgo nuts at the bottom.
