Savor the comforting flavors of Chao, a Vietnamese rice porridge enriched with tender pork belly and a hint of lime. Ideal for a cozy weeknight dinner or a nourishing breakfast that warms the soul.

Ingredients

  • 1 cup rice
  • 6 cups water
  • 200 grams pork belly
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon black pepper
  • 2 stalks green onion
  • 1 lime lime wedges

Method

    Rinse the rice under cold water until the water runs clear, then soak it for about 30 minutes.

    In a large pot, bring 6 cups of water to a boil. Add the soaked rice and cook on low heat until the rice is tender and water is absorbed, about 15-20 minutes.

    While the rice is cooking, prepare the marinade for the pork by mixing fish sauce, sugar, and black pepper in a bowl.

    Add the sliced pork belly to the marinade, ensuring all the pieces are well coated. Let it marinate for at least 10 minutes.
