Ingredients

  • 400 grams chicken thighs, boneless and skinless
  • 200 grams tofu, firm
  • 100 grams shimeji mushrooms
  • 1 cup napa cabbage
  • 1 cup carrots
  • 4 cups dashi broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin

Method

    In a large pot, pour the dashi broth and bring it to a simmer over medium heat.

    Add the chicken thighs to the pot and cook until they are no longer pink, about 5-7 minutes.
