- 200 grams tofu, firm
- 100 grams shimeji mushrooms
- 1 cup napa cabbage
- 1 cup carrots
- 4 cups dashi broth
- 2 tablespoons soy sauce
- 1 tablespoon mirin

In a large pot, pour the dashi broth and bring it to a simmer over medium heat.

Add the chicken thighs to the pot and cook until they are no longer pink, about 5-7 minutes.

Stir in the soy sauce and mirin, then add the napa cabbage, carrots, shimeji mushrooms, and tofu.
