In a large pot, combine the purple barley and water. Bring to a boil.

Once boiling, reduce the heat to low and let it simmer for about 25 minutes or until the barley is tender.

Stir in the corn kernels, pineapple chunks, sugar, cinnamon, and coconut milk into the pot with barley.

Continue to cook for an additional 5 minutes, stirring occasionally until everything is well combined and heated through.
