Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can crushed tomatoes
  • 4 large eggs

Method

    Heat the olive oil in a large skillet over medium heat.

    Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the diced red and green bell peppers and garlic, cooking for another 3-4 minutes until softened.
