Experience the vibrant flavors of Vietnam with Cha Ca, a fragrant dish of turmeric-marinated fish, fresh dill, and crunchy peanuts served over rice noodles. Perfect for a weeknight dinner that transports you to the streets of Hanoi.

Ingredients

  • 500 grams white fish fillets (such as catfish or tilapia)
  • 2 tablespoons fish sauce
  • 1 tablespoon turmeric powder
  • 1 tablespoon vegetable oil
  • 1 cup fresh dill
  • 1 cup green onions
  • 1 cup rice noodles
  • 1 cup peanuts

Method

  1. 1

In a bowl, combine the fish fillets, fish sauce, and turmeric powder. Mix well and marinate for at least 15 minutes.

  2. 2

Heat the vegetable oil in a grill pan or skillet over medium heat.

  3. 3

Once hot, add the marinated fish fillets to the pan and cook for about 3-4 minutes on each side until golden and cooked through.

  4. 4

During the last minute of cooking, add the chopped dill to the pan, stirring gently to combine.

  5. 5

To serve, place the cooked rice noodles in bowls and top with the grilled fish and dill mixture.

  6. 6

Garnish with chopped green onions and crushed peanuts before serving.
