Indulge in the sweet, refreshing taste of Cendol, a traditional Southeast Asian dessert made with vibrant green rice flour noodles, creamy coconut milk, and rich palm sugar. Perfect for a warm afternoon treat or a delightful finish to any meal.

Ingredients

  • 100 grams green rice flour
  • 50 grams tapioca flour
  • 200 ml pandan juice
  • 500 ml coconut milk
  • 100 grams palm sugar
  • 1 liter ice water
  • pinch salt

Method

    In a mixing bowl, combine the green rice flour, tapioca flour, and a pinch of salt. Mix well.

    Gradually add the pandan juice to the flour mixture while stirring until you achieve a smooth batter.

    Bring a pot of water to a boil, then reduce the heat to medium. Using a cendol maker or a sieve, press the batter into the boiling water to form strands.

    Allow the cendol strands to cook for about 2-3 minutes until they float to the surface, then remove and rinse with cold water. Set aside.

    In a separate saucepan, heat the coconut milk and add the palm sugar. Stir until the sugar dissolves and the mixture is well combined. Do not boil.

    To serve, place a handful of cendol strands in a bowl, pour the sweetened coconut milk over them, and add ice water to taste.
