  • 1 kg yellow potatoes
  • 1 tablespoon lime juice
  • 1 teaspoon aji amarillo paste
  • 1 cup cooked chicken breast
  • 1 medium avocado
  • 0.5 cup mayonnaise
  • 2 hard-boiled eggs
  • 1 tablespoon black olives

Method

    Boil the yellow potatoes in salted water until tender, about 20 minutes. Drain and let cool.

    Peel the cooled potatoes and mash them in a large bowl until smooth.

    Mix in lime juice, aji amarillo paste, and salt to taste into the mashed potatoes until well combined.
