Indulge in the delicate sweetness of Castella, a traditional Japanese sponge cake that's light and airy, perfect for afternoon tea or a special dessert. Its subtle honey and vanilla notes will enchant your taste buds.

Ingredients

  • 4 large eggs
  • 200 g granulated sugar
  • 100 ml milk
  • 100 g all-purpose flour
  • 30 g honey
  • 1 tsp vanilla extract
  • 1 pinch salt

Method

  1. 1

Preheat the oven to 170°C (340°F) and line a baking pan with parchment paper.

  2. 2

In a large bowl, whisk together the eggs and sugar until the mixture is thick and pale.

  3. 3

Add the milk, honey, and vanilla extract to the egg mixture, and stir until well combined.

  4. 4

Sift the flour and salt into the mixture, gently folding until just combined and smooth.

  5. 5

Pour the batter into the prepared baking pan, smoothing the top with a spatula.

  6. 6

Bake in the preheated oven for 10 minutes or until a toothpick comes out clean.

  7. 7

Remove from the oven and let it cool in the pan for a few minutes before transferring to a wire rack.

  8. 8

Once cooled, slice into pieces and serve. Enjoy your homemade Castella!
