Ingredients

  • 1 1/2 cups sugar
  • 1 1/4 cups oil
  • 3 eggs
  • 2 cups grated carrots or Granny Smith apples
  • 1 cup grated fresh pineapple or crushed tinned pineapple
  • 1/2 cup chopped pecan nuts
  • 1/4 cup smooth apricot jam
  • 1/2 cup butter
  • 4 cups icing sugar
  • 1 tsp vanilla essence
  • 250 g cream cheese

Method

    Sift the dry ingredients together twice.

    Beat the sugar, oil, and eggs together until very well-blended.

  3. 3

    Use an electric hand beater and beat at high speed for 3 minutes.
