Ingredients

  • 125 ml oil
  • 2 eggs
  • 200 ml brown sugar
  • 5 ml vanilla essence
  • 1 cup self-raising flour
  • 5 ml mixed spice
  • 5 ml cinnamon
  • 500 ml grated carrot (~4 carrots)
  • 1/2 cup raisins
  • nuts (optional)

Method

    Mix oil, eggs, brown sugar, and vanilla essence.

    Add self-raising flour, mixed spice, cinnamon, grated carrot, raisins, and nuts (optional).

    Mix and pour into a round microwave mould (preferably with a hole in the middle).
