- 2 tablespoons butter
- 2 large onions
- 3 cloves garlic
- 500 ml Belgian beer
- 2 tablespoons Dijon mustard
- 2 tablespoons brown sugar
- 2 sprigs thyme
- 2 bay leaves bay leaves

Melt the butter in a large pot over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 10 minutes.

Add the minced garlic and cook for an additional 2 minutes until fragrant.

Increase the heat to medium-high and add the beef cubes. Brown the meat on all sides, about 5-7 minutes.

Stir in the mustard, brown sugar, thyme, and bay leaves. Pour in the Belgian beer, and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
