Experience the vibrant flavors of Vietnam with Cao Lau, a delightful bowl of chewy rice noodles topped with tender pork belly, fresh herbs, and crunchy bean sprouts. Perfect for a cozy weeknight dinner that transports you to the streets of Hoi An.

Ingredients

  • 200 grams rice noodles
  • 200 grams pork belly
  • 2 tablespoons vegetable oil
  • 1 cup bean sprouts
  • 3 leaves herbs (mint, basil, or cilantro)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce

Method

  1. 1

Prepare the rice noodles by boiling them in salted water for 5-7 minutes until al dente. Drain and set aside.

  2. 2

In a pan, heat the vegetable oil over medium heat and add the sliced pork belly. Cook until golden and crispy, about 8-10 minutes.

  3. 3

Add soy sauce to the pork belly in the pan, stir well to combine, and allow it to cook for another 2 minutes.

  4. 4

In serving bowls, layer the cooked rice noodles first, then top with the crispy pork belly and some bean sprouts.

  5. 5

Garnish with fresh herbs of your choice and drizzle with hoisin sauce over the top.

  6. 6

Serve warm and enjoy your authentic Cao Lau with extra hoisin sauce for dipping if desired.
