Warm your soul with Canja, a comforting Portuguese chicken and rice soup infused with garlic, fresh parsley, and tender vegetables. Ideal for cozy weeknight dinners or when you need a nourishing hug in a bowl.

Ingredients

  • 1 whole chicken
  • 1 cup rice
  • 1 medium onion
  • 2 cloves garlic
  • 2 medium carrots
  • 1 stalk celery
  • 1 teaspoon salt
  • 1 liter water
  • 2 tablespoons fresh parsley

Method

  1. 1

Place the whole chicken in a large pot and cover it with water.

  2. 2

Add the quartered onion, minced garlic, chopped carrots, and celery to the pot.

  3. 3

Bring the water to a boil, then reduce the heat and let it simmer for about 30 minutes.

  4. 4

Remove the chicken from the pot and let it cool slightly. Shred the meat from the bones.

  5. 5

Return the shredded chicken to the pot, add the rice, and season with salt. Cook for another 15 minutes until the rice is tender.

  6. 6

Taste and adjust the seasoning if necessary.

  7. 7

Ladle the soup into bowls and garnish with fresh parsley before serving.
