Warm up with a comforting bowl of Caldo Verde, a traditional Portuguese soup brimming with silky potatoes, vibrant collard greens, and a hint of garlic. Ideal for cozy weeknight dinners or gatherings with friends.
IngredientsWhat you need
- 1 large onion
- 2 cloves garlic
- 4 cups potatoes
- 6 cups vegetable broth
- 5 ounces collard greens
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Method
- 1
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- 2
Add the diced potatoes to the pot and stir well. Pour in the vegetable broth, and bring to a boil.
- 3
Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- 4
Using a potato masher or an immersion blender, mash or blend the soup until smooth, leaving some chunks for texture if desired.
- 5
Stir in the sliced collard greens (or kale) and cook for an additional 5 minutes until the greens are tender.
- 6
Season with salt and black pepper to taste. Serve hot with crusty bread on the side.
