Ingredients

  • 1 large onion
  • 2 cloves garlic
  • 4 cups potatoes
  • 6 cups vegetable broth
  • 5 ounces collard greens
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    Add the diced potatoes to the pot and stir well. Pour in the vegetable broth, and bring to a boil.

    Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.

    Using a potato masher or an immersion blender, mash or blend the soup until smooth, leaving some chunks for texture if desired.

    Stir in the sliced collard greens (or kale) and cook for an additional 5 minutes until the greens are tender.
