Savor the warm, chewy goodness of homemade Brezeln, a delightful twist on classic pretzels. Perfect for a cozy evening snack or a festive gathering, these soft treats are best enjoyed fresh out of the oven, sprinkled with coarse sea salt.

- 500 g all-purpose flour
- 10 g instant yeast
- 1 cup warm water
- 2 tbsp sugar
- 2 tbsp salt
- 1 cup baking soda
- 1 liter water

In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.

Add the flour and salt to the yeast mixture. Mix until a dough forms, then knead for about 2-3 minutes until smooth.

Cover the dough with a damp cloth and let it rest for 5 minutes while you prepare the boiling water.

In a large pot, bring 1 liter of water to a boil and add 1 cup of baking soda carefully (it will bubble up).

Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

Boil each pretzel in the baking soda water for about 30 seconds, then remove with a slotted spoon and place them on a baking sheet lined with parchment paper.

Sprinkle coarse sea salt on top of each pretzel and bake in a preheated oven at 200°C (400°F) for about 8-10 minutes or until golden brown.
