- 1 kg pork shoulder
- 250 g beef
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon nutmeg
- 3 cloves garlic
- 2 tablespoons fresh parsley
- 2 meters hog casings

Soak the hog casings in cold water for at least 30 minutes, then rinse well.

In a large mixing bowl, combine the ground pork and beef.

Add in the salt, black pepper, nutmeg, minced garlic, and chopped parsley. Mix thoroughly by hand until well combined.

Stuff the sausage mixture into the prepared hog casings, twisting into 15-20 cm links as you go.

Pinch the links to seal and tie the ends securely. Prick each sausage with a needle to avoid bursting during cooking.

Grill the bratwursts over medium heat for about 15-20 minutes, turning occasionally until cooked through and browned.
