Savor the hearty flavors of homemade bratwurst, crafted from tender pork and beef, seasoned with garlic and nutmeg. Perfect for a cozy weeknight dinner or a festive backyard barbecue, these sausages are sure to impress.

Ingredients

  • 1 kg pork shoulder
  • 250 g beef
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon nutmeg
  • 3 cloves garlic
  • 2 tablespoons fresh parsley
  • 2 meters hog casings

Method

  1. 1

Soak the hog casings in cold water for at least 30 minutes, then rinse well.

  2. 2

In a large mixing bowl, combine the ground pork and beef.

  3. 3

Add in the salt, black pepper, nutmeg, minced garlic, and chopped parsley. Mix thoroughly by hand until well combined.

  4. 4

Stuff the sausage mixture into the prepared hog casings, twisting into 15-20 cm links as you go.

  5. 5

Pinch the links to seal and tie the ends securely. Prick each sausage with a needle to avoid bursting during cooking.

  6. 6

Grill the bratwursts over medium heat for about 15-20 minutes, turning occasionally until cooked through and browned.

  7. 7

Serve hot with mustard, sauerkraut, or in a bun with your favorite toppings.
