Indulge in the heartwarming flavors of Italian cuisine with this tender Brasato, a slow-cooked beef chuck roast simmered in rich red wine and aromatic herbs. Perfect for a cozy family dinner or a special gathering.

- 1 kg beef chuck roast
- 2 tablespoons olive oil
- 1 large onion
- 2 cloves garlic
- 2 carrots carrots
- 2 stalks celery
- 1 bottle red wine
- 2 sprigs fresh rosemary

Method

Heat the olive oil in a large Dutch oven over medium heat.

Season the beef chuck roast with salt and pepper, then brown it on all sides in the hot oil.

Remove the browned meat and set it aside. Add the onion, garlic, carrots, and celery to the pot, sautéing until softened.

Pour in the red wine, scraping the bottom of the pot to deglaze. Bring it to a simmer.

Return the beef to the pot, add the rosemary, bay leaf, and enough water to cover the meat halfway.

Cover the pot and simmer on low heat for about 2-3 hours, until the meat is fork-tender.

Check occasionally, adding water if necessary to keep the liquid level consistent.

Once done, remove the meat and let it rest for 10 minutes before slicing. Serve with the sauce and vegetables from the pot.
