Preheat your oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat, then sauté the chopped onion until soft and translucent.

Add the spinach and cook for an additional 2-3 minutes, mixing well. Remove from heat and let it cool slightly.

In a mixing bowl, combine the sautéed onion and spinach with crumbled feta, black pepper, and salt.

Lay out one sheet of phyllo dough on a clean surface, brush lightly with beaten egg. Place another sheet on top and repeat this process for 3-4 layers.

Spoon a portion of the filling along one edge of the phyllo. Roll it up tightly to form a log. Bend into a spiral shape and place on a baking sheet.

Brush the top of the börek with more beaten egg. Repeat until all filling and phyllo are used.
