Indulge in the festive spirit with Bolo Rei, a traditional Portuguese king cake brimming with mixed dried fruits, candied delights, and crunchy nuts. Perfect for holiday gatherings or a cozy family brunch, this treat is a celebration in every bite.

Ingredients

  • 500 g all-purpose flour
  • 100 g sugar
  • 10 g salt
  • 25 g fresh yeast
  • 150 ml milk
  • 100 g butter
  • 3 large eggs
  • 200 g mixed dried fruits
  • 100 g candied fruit
  • 50 g nuts

Method

    In a small bowl, dissolve the fresh yeast in warm milk and let it sit for about 10 minutes until frothy.

    In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the yeast mixture, softened butter, and eggs.

    Knead the dough for about 10-15 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour as needed.

    Incorporate the mixed dried fruits and nuts into the dough, kneading until evenly distributed. Shape the dough into a ball.

    Place the dough in a lightly greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

    Preheat the oven to 180°C (350°F). After rising, punch down the dough and shape it into a ring. Place it on a baking sheet lined with parchment paper.
