Savor the vibrant flavors of Bolani Gandana, a delightful Afghan stuffed flatbread filled with fresh spinach and green onions. Perfect for a cozy weeknight dinner or a unique appetizer at your next gathering.
IngredientsWhat you need
- 2 cups all-purpose flour
- 1 cup water
- 1 bunch green onions
- 1 cup spinach
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons oil
Method
- 1
In a mixing bowl, combine the all-purpose flour and salt. Gradually add in water while mixing to form a smooth dough. Knead for about 5-7 minutes until elastic.
- 2
Cover the dough with a damp cloth and let it rest for about 15 minutes.
- 3
In another bowl, mix the chopped green onions, spinach, black pepper, and a pinch of salt. This will be your filling.
- 4
Divide the rested dough into small balls. Roll each ball into a thin circle on a floured surface.
- 5
Place a generous spoonful of the filling on one half of the rolled dough. Fold the dough over to create a half-moon shape and press the edges to seal.
- 6
Heat oil in a pan over medium heat. Fry each bolani for about 3-4 minutes on each side, or until golden brown and crispy.
- 7
Remove from the pan and place on paper towels to absorb excess oil. Serve warm.
