- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 2 cups spinach
- 1 cup potatoes
- 1 small onion
- 2 tablespoons oil
- 1 teaspoon cumin seeds

In a large bowl, mix the flour and salt. Gradually add warm water, kneading until you form a smooth dough. Cover and let it rest for 20 minutes.

In a pan, heat 1 tablespoon of oil over medium heat. Add chopped onion and cumin seeds, and sauté until onions become translucent.

Add chopped spinach and cooked potatoes to the pan. Mix well and cook for another 5 minutes. Remove from heat and let the filling cool.

Divide the rested dough into 8 equal balls. Roll each ball into a flat circle about 6 inches in diameter.

Place a generous amount of the filling on one half of each dough circle. Fold the other half over to form a semi-circle and press the edges to seal.

In a frying pan, heat the remaining oil over medium heat. Fry each bolani for 3-4 minutes on each side, or until golden brown and crispy.

Remove from the pan and place on paper towels to drain excess oil. Serve warm with yogurt or chutney.
