Ingredients

  • 1 kg black raspberries
  • 500 ml soju
  • 200 g sugar
  • 500 ml water
  • 1 lemon lemon juice
  • 1 pinch salt

Method

    Rinse the black raspberries thoroughly under cold water, removing any debris.

    In a large pot, combine the rinsed black raspberries, sugar, and water. Bring to a gentle boil over medium heat.

    Once boiling, reduce the heat and let it simmer for about 20 minutes, stirring occasionally until the raspberries break down.

    Remove the pot from heat and let it cool slightly. Strain the mixture through a fine sieve or cheesecloth to extract the juice.

    In a pitcher, combine the strained raspberry juice, soju, lemon juice, and a pinch of salt. Stir well.
