- 1 kg beef chuck
- 150 g bacon
- 2 tablespoons olive oil
- 4 cups red wine
- 3 cups beef broth
- 2 medium carrots
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons flour
- 2 bay leaves bay leaves
- 1 teaspoon thyme
- 100 g mushrooms

Preheat your oven to 160°C (320°F).

In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove and set aside.

In the same pot, add olive oil and brown the beef cubes on all sides. Remove the beef and set aside.

Add onions, carrots, and garlic to the pot and sauté until softened, about 5 minutes.

Sprinkle flour over the vegetables, stir well, and cook for another 2 minutes.

Return the beef and bacon to the pot, add the red wine, beef broth, thyme, and bay leaves. Bring to a simmer.

Cover the pot and transfer it to the oven. Cook for 2 to 3 hours, or until the beef is tender.

In the last 30 minutes, add the sliced mushrooms to the pot.
