Savor the tropical delight of bocadillo, a sweet guava treat wrapped in banana leaves. Perfect for a sunny afternoon snack or a festive gathering, this dish brings a taste of the Caribbean to your table.

Ingredients

  • 2 cups fresh guava pulp
  • 1 cup sugar
  • 1 tablespoon lime juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 pinch salt
  • -17 °C for wrapping

Method

  1. 1

In a saucepan, combine the guava pulp, sugar, and salt. Cook over medium heat, stirring occasionally.

  2. 2

Once the mixture begins to bubble, reduce the heat to low and continue to cook for about 15 minutes.

  3. 3

In a small bowl, mix the cornstarch with water until smooth, then add to the guava mixture. Stir well to combine.

  4. 4

Cook for another 5-10 minutes until the mixture thickens and pulls away from the sides of the pan.

  5. 5

Remove from heat and add lime juice, stirring to incorporate fully.

  6. 6

Pour the mixture into a greased dish or mold lined with banana leaf, and spread evenly.

  7. 7

Let it cool at room temperature for several hours or until set.

  8. 8

Once set, cut into squares or bars and wrap in banana leaves or parchment paper for serving.
